The Luscious History of Shrimp Scampi:
Going back to the 14th century, this recipe has an interesting history to its accord. The recipe is believed to be originated in the Italian city of Genoa, however, some others believe the recipe is originally from the USA. A popular belief also states that the initial recipe was made with crabfish which was eventually replaced by Shrimp.
The first documentation of the Shrimp recipe could be found in Hannah Glasse’s Cookbook, The Art of Cookery made Plain and Simple, where there is a recipe for “To Make Shrimp Scampi”. Hannah Glassey was an English cookery writer from the 18th century and this book of hers became the best-selling recipe book from that century. The recipe in her book had boiled shrimp fried in butter and served with lemon garnishing.
From then to now, shrimp scampi has risen to the honour of a classic recipe that is available on the menus of most Italian restaurants. In the 20th century, the recipe reached America and was popular from there on.
In the most classic Shrimp Scampi recipe, the shrimp are cooked in garlic butter sauce and served with a hotbed of pasta.
How is Shereen’s version of the classic dish different from that of Ramsay?
Who does not know Gordon Ramsay, the famous celebrity chef who is popular both for his recipes and his television presence? When we compare Sherren’s Shrimp Scampi recipe with that of Ramsay, there is certainly some difference. Although we cannot comment on which version tastes better or which one is closer to authentic but will provide you with the recipe for both so that you can try them for yourself and have your verdict for the same.
Gordon Ramsay’s take on Shrimp Scampi: Ramsay starts his recipe by slicing two shallots and one pound of raw shrimp, along with grating garlic and lemon and mincing the onions and tomatoes. Parallely, he cooks the capellini pasta as per instruction to use for serving. Next, he cooks the sauce for which he carmelizes the shallots in olive oil and then adds the other ingredients along with cherry tomatoes and some chilli flakes. Then he adds some white wine and chicken stock and leaves the sauce for reduction.
Simultaneously, he seasons the shrimp with salt and black pepper and cooks until golden brown. Once the sauce is ready, he garnishes it with fresh basil and flavours the shrimp with lemon zest. For serving, he placed the cooked capellini pasta and topped it with the Scampi sauce and shrimp and garnishes it with parmesan cheese.
Shereen Pavlides’s way of cooking Shrimp Scampi: On the contrary, cooking with shereen shrimp scampi recipe is a bit different and it is interesting how she creates her own twist to add more flavour to the recipe. Shereen peels into the vein of the shrimp and marinates it with lemon zest, minced garlic, and olive oil for 2 to 4 hours. The shrimp are then cooked for 5 minutes by adding salt and black pepper and remove in a bowl.
Next, she adds white wine to the oil and some lemon juice. Once the mixture is reduced, she adds back the shrimp and tops it with cold and unsalted butter. As the butter melts, the dish is ready for serving. Interesting, isn’t it?
